Ah zucchini season…. where one finds oneself googling “what can I do with too much zucchini” or “what can I make with lots of zucchini?”. Below is a list of my absolute favourite zucchini recipes, even the kids eat them (and I have a couple of picky eaters in the fold!). We usually plant at least two varieties of zucchini in the garden, this year we have planted Blackjack (the long dark green variety commonly found in supermarkets and grocery stores) and golden zucchini (delightfully vibrant yellow on the outside and a bright, creamy white on the inside).
